Meal Plan Monday: 2/17/2014-2/23/2014
I’m still trying to use up existing inventory right now (and so far, so good…week #2, and there should be plenty for week #3)!
Monday: Tomato Chicken Gumbo WWPP=5
Tuesday: Skinny Pizza Meatloaf WWPP=6 & Maple Dill Carrots WWPP=1
Wednesday: Tacos, Chips & Salsa, Corn/Mexican Corn
Thursday: Sour Cream Chicken Enchiladas, Corn, Cilantro Lime Rice
Friday: Lasagna “Helper” (boxed); Lemon Pepper Green Beans
Saturday: {Breakfast} Skinny Hash Browns, Bacon and Eggs Breakfast Casserole WWPP=6 (Note: we’ve had this before and I would add more seasonings and puree the cottage cheese smooth before adding), {Lunch} Smothered Chicken with Mushrooms & Creamed Spinach, {Dinner} Chili & Cheese Nachos
Sunday:{Breakfast} Loaded Potato Frittata, {Lunch} Flatbread BBQ Chicken Pizza, {Dinner} Chicken & Stuffing Casserole WWPP=6; Green Beans
