Pumpkin Pie Iced Latte, WWPP=2

Been trying to figure out a Weight Watchers friendly Pumpkin Pie Iced Latte recipe…and by golly, I think I have it!  I use a Magic Bullet in my recipe but you can use a blender…or nothing at all and just use crushed ice.

Ingredients

  • 4 teaspoons Sugar-free French Vanilla Powdered Creamer
  • 3 packets (or 1-1/2 teaspoons) Splenda
  • 1/4 cup hot water
  • 1 Tablespoon Pureed Canned Pumpkin
  • 1/8 teaspoon Pumpkin Pie Spice
  • 1/4 cup Light Vanilla Soy Milk
  • 1/2 cup cold water
  • 8-10 ice cubes
  • 2 Tablespoons Sugar-free Whipped Topping (optional)
  • Pinch of Pumpkin Pie Spice for garnish (optional)

Instructions

  1. Dissolve the creamer and Splenda in 1/4 cup hot water in a Magic Bullet container.
  2. Add the pumpkin, pie spice, soy milk and 1/2 cup cold water and stir.
  3. Add ice cubes; attach blades and blend about 10 seconds.
  4. Transfer to cup or glass and add whipped topping and sprinkle with pie spice for garnish.  Enjoy!

Makes 1 iced latte drink.  Weight Watchers Points Plus = 2
