Friday: Hubby and I are leading a marriage seminar tonight and tomorrow, so we’ll be eating what they provide there.  Interested in the marriage seminar?  It’s called the Art of Marriage!

Saturday: Breakfast & Lunch, we’ll still be at the Art of Marriage seminar and for dinner, we’ll probably make a run to Chick-Fil-A, as we’ll leave the seminar and turn right back around to come back to church!

Well, actually I made two…but for this post, let’s just take a glance at my trip to the Dallas Zoo with my hubby for my 38th birthday! :)  I wanted to go to the Dallas Zoo.  It had been 20+ years since I had been and hubby had never been (even though he grew up in Fort Worth (33 miles away) and I grew up in Texarkana (181 miles away)…go figure!). Tuesday: Skinny Pizza Meatloaf WWPP=6 & Maple Dill Carrots WWPP=1

Wednesday: Tacos, Chips & Salsa, Corn/Mexican Corn

Thursday: Sour Cream Chicken Enchiladas, Corn, Cilantro Lime Rice

Friday: Lasagna “Helper” (boxed); Lemon Pepper Green Beans

Saturday: {Breakfast} Skinny Hash Browns, Bacon and Eggs Breakfast Casserole WWPP=6 (Note: we’ve had this before and I would add more seasonings and puree the cottage cheese smooth before adding), {Lunch} Smothered Chicken with Mushrooms & Creamed Spinach, {Dinner} Chili & Cheese Nachos

Sunday:{Breakfast} Loaded Potato Frittata, {Lunch} Flatbread BBQ Chicken Pizza, {Dinner} Chicken & Stuffing Casserole WWPP=6; Green Beans

Recipe: Tomato Chicken Gumbo WWPP=5

I have searched the interwebz for the origins of the recipe and cannot find it, so I’m going to share it because it’s quick and easy and tastes awesome!  If you know it’s origins, please let me know!

Tomato Chicken Gumbo

Total Time: 20 minutes

Number of servings: 8

Per Serving 308 calories

Fat 16 g

Carbs 27 g

Protein 14 g

Ingredients

  • 1 can (14 oz.) chicken broth
  • ½ lb. hot sausage links or Polish Sausage, cooked and sliced
  • 1 can (26 oz.) chunky spaghetti sauce
  • 2 cups cooked diced chicken
  • 1 can (11 oz.) canned corn, drained
  • 1 green bell pepper, diced
  • 1 ½ cups cooked white rice

Instructions

  1. To freeze: Dump all ingredients except rice into 1 gallon Ziploc freezer bag. Lay flat in freezer.
  2. To cook: In 6-quart pot, bring gumbo to a boil. Add cooked rice. Cover; cook over medium heat 10 minutes or until heated through. Add additional water or broth for a thinner gumbo. For spicier gumbo serve with hot red pepper sauce.

This recipe can be made in a pot on the stove, too…no need to worry about freezing it if you don’t want to! We sub shredded chicken for diced because that’s what we usually have.
