{"id":773,"date":"2014-07-21T15:42:36","date_gmt":"2014-07-21T15:42:36","guid":{"rendered":"http:\/\/christinashaw.com\/?p=773"},"modified":"2014-07-21T19:20:28","modified_gmt":"2014-07-21T19:20:28","slug":"weight-watcher-goodies","status":"publish","type":"post","link":"http:\/\/christinashaw.com\/?p=773","title":{"rendered":"Weight Watcher Goodies"},"content":{"rendered":"<p>I&#8217;ve been eye-balling some sweets for a while now. \u00a0Have you tried any of these?<!--more--><\/p>\n<p><a href=\"http:\/\/www.reluctantwwfoodie.com\/2013\/01\/03\/mudslide-cookies\/\" target=\"_blank\">Mudslide Cookies <\/a>(Serves 30) WWPP=4 (or Serves 48\/WWPP=2)<\/p>\n<p>Mudslide Cookies (slightly modified from Cooking Light)<br \/>\nServings: 30<br \/>\nPointsPlus Per Serving: 4 (or 48 cookies for 2 PP each)<\/p>\n<p>INGREDIENTS<br \/>\n2 oz unsweetened chocolate, 10 PP<br \/>\n2 oz bittersweet chocolate, 9 PP<br \/>\n1 1\/2 tbsp organic unsalted butter, 4 PP<br \/>\n1 1\/2 tsp strong black coffee (CL used instant coffee granules, but I\u2019m classy, so I don\u2019t have those)<br \/>\n1 tsp vanilla extract<br \/>\n1 1\/2 cups all purpose unbleached flour, 17 PP<br \/>\n1\/2 cup unsweetened cocoa powder, 4 PP<br \/>\n2 tsp baking powder<br \/>\nchocolate, cookie, peanut butter, pb fudge, fudge, dessert<br \/>\n1\/8 tsp salt<br \/>\n2 large eggs, 4 PP<br \/>\n3 egg whites, 1 PP (CL used 1\/2 cup egg substitute, but I didn\u2019t have that)<br \/>\n2 1\/2 cups organic cane sugar, 52 PP (CL used regular refined sugar)<br \/>\n1\/2 cup chopped walnuts, 11 PP<\/p>\n<p>INSTRUCTIONS<br \/>\n1. Preheat oven to 350\u00b0.<br \/>\n2. Place butter, bittersweet chocolate, and unsweetened chocolate into a microwave-safe bowl; microwave at HIGH 1 minute or until chocolate is almost melted. (I melted my chocolate in a sauce pan on the stove since I have a tendency to over-nuke my chocolate.) Stir until smooth. Combine coffee granules and 1 tablespoon hot water, stirring until granules dissolve. Stir coffee and vanilla into chocolate mixture.<br \/>\n3. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, cocoa, baking powder, and salt, stirring well with a whisk. Combine sugar, egg substitute, and eggs in a large bowl; beat with a mixer at high speed 6 minutes or until thick and pale. Gently stir 1\/4 of egg mixture into chocolate mixture; stir chocolate mixture into remaining egg mixture. Stir in flour mixture and nuts.<br \/>\n4. Cover baking sheets with parchment paper or use a silpat mat (BUY ONE. Do it now.) Drop dough by rounded tablespoonfuls 2 inches apart on prepared baking sheets; with moist hands, gently press dough into 1\/4-inch-thick rounds (the pressing is optional. I didn\u2019t press and they turned out perfectly round). Bake at 350\u00b0 for 15 minutes or until set. Cool 1 minute. Remove from pans; cool completely on wire racks. You can double the batch for a 4-Quart slow cooker or triple for a 6-Quart. But if you&#8217;re a Weight Watchers I wouldn&#8217;t suggest it unless you have someone to share them with!!<br \/>\nAuthor: Martha | Simple Nourished Living<br \/>\nRecipe type: Slow Cooker Sweets\/Desserts<br \/>\nServes: 12<\/p>\n<p>INGREDIENTS<br \/>\n\u00bd cup plus 1 tablespoon all-purpose flour<br \/>\n\u00bc teaspoon baking powder<br \/>\n\u00bc cup sugar<br \/>\n3 tablespoons packed light brown sugar<br \/>\n2 tablespoons butter, at room temperature<br \/>\n2 tablespoons creamy peanut butter<br \/>\n1 large egg, at room temperature<br \/>\n1 teaspoon vanilla<br \/>\n? cup semisweet mini chocolate chips<\/p>\n<p>INSTRUCTIONS<br \/>\nIdeal Slow Cooker Size: 2 to 3-1\/2-Quart.<br \/>\nGenerously grease the inside of your slow cooker with butter. Then add a little flour and tilt it all around to coat the sides and bottom. Dump out any excess flour. (Or coat the bottoms and sides with nonstick spray with flour, which is what I did.)<br \/>\nIn a bowl, whisk together the flour and baking powder and then set it aside.<br \/>\nWith an electric mixer at medium speed beat together the butter, peanut butter, sugar and brown sugar until light and creamy. Beat in the egg until it is fully incorporated. Beat in the vanilla until the mixture is smooth.<br \/>\nScrape down the sides of the bowl with a rubber spatula and remove the beaters. Add the flour mixture and gently fold it in with the spatula until it&#8217;s just blended. Gently stir in the chocolate chips.<br \/>\nScrape and smooth the batter into the prepared slow cooker. (It will be thick.)<br \/>\nPlace several layers of paper towels on top of the slow cooker and then set the lid in place.<br \/>\n(This will prevent condensation from dripping back into your blondies while they bake.) Cook on HIGH about 1-1\/2 hours. Or until the blondies are firm throughout and a little bit dry at the edges and set to the touch in the middle.
